Cookies
After a few trials making cookies, with varied results, I have found that the basic recipe from Nita Mehta's book - Snacks for children works very well for me in my OTG.
Here is the basic recipe from the book, which I have altered to suit my palate and my oven settings.
Wheat cookies
Whole wheat flour - 1 cup
Softened butter - 1/2 cup + 2 Tbsp
Powdered sugar - 3/4 cup
Baking powder - 1/2 tsp
a pinch of baking soda
3-4 tsp of milk for kneading
To get the basic dough
1. Beat butter and sugar until it is light and creamy.
2. Add the dry ingredients to the butter and sugar.
3. Knead into a smooth dough.
4. Take small balls and press the into small circles on a greased tray, leaving some space between the cookies for expansion.
5. Meanwhile pre heat the oven to 150 degree celcius for 10 mts.
6. Put the baking tray in the centre and bake for 16 to 17 mts at 150degrees. If you feel after this time it is still not done, then bake for another few minutes.
Notes
1. I add choco chips (I just add roughly chopped Dairy Milk choclate) to the basic dough, to get Choco chip cookies and the kids love it.
2. Today I tried with grated fresh coconut and lot of freshly ground cardamom. It gave a wonderful aroma as it was baking and was very tasty too. Initially it was soft and chewy, later it became quite crunchy.
3. I find that if I set the oven temp to 180 degree celcius (as mentioned in a number of recipes), the cookies get burnt easily. It might have to do with the individual ovens.
Finally, I have come to realise that baking is very relaxing for me. Different people do different things to relax or just beat the blues ! Reading a book, listening to music, workouts, gardening, cooking. Baking it is - for me, for now !
