Of Muffins and Memories

Muffins remind me of the little time I spent in the US, in various capacities !

When I went to work in the US for a very short while, the office cafeterias would give out such a wonderful aroma in the mornings, at breakfast time. I soon realised that it was due to the mouth watering yummy things called Muffins. Team members who had skipped b'fast at home, would be generous enough to share their muffins which they would pick on the way to work.

Later when I went with Sathish and Sooraj as a baby to the US, I would pass a neat little cafe on the way to grocery shopping. I would be pushing along Sooraj in the stroller and each time I passed this shop, I would fondly linger on assimiliating that wonderful fragrance from that cafe. A few times I had stopped to indulge in some wonderful muffins from there :-).

So this weekend, after reading this interesting article by Pamela Timms in Mint Lounge and some online search, I chanced on this recipe which seemed easy enough. It yielded the perfect muffins, that I have ever baked :-). I am so happy with the outcome. I did not use strawberries, but used raisins instead. Otherwise I followed the recipe exactly.

From my blog posts, it might seem as though every thing I bake in my kitchen is a success. No, that's not true. For every successful baking attempt I post here, there is one equal disaster which has happened - meaning waste of time, effort , ingredients and lots of disappointment. But that's how we learn !

But today is one of those fabulous days and I am going to savour this moment of elation. Presenting Eggless Banana Raisin Muffins :-)

Chox, you can come anytime..but the only problem is that these cakes and muffins have a mind of their own and they like to spring surprises on me :-)

yummy! I find I never get food right even after following a recipe religiously! The answer must be to pile on to others' baking :p
