Cheese Cake


I never honestly thought I would be able to do a cheese cake in my kitchen ! In my mind, these are some of the exotic desserts, that taste best in a restaurant. But then a year back, when Vibha had made a yummy cheesecake for our Saffron Tree meet with a very simple recipe, it struck me that may be it was doable in the house. But I never got around to it.

I waited for the Diwali-Sweet-mania to settle down, before I indulged in another of my baking experiments. Flipping through my recipe book , I chanced on a Mango Cheese cake recipe by Nita Mehta which seemed easy enough. I did a lit bit of online research too and referring to various sources, I did manage to come up with a Cheese Cake, with the flavour of Black Currants. I had to settle for bottled fruit pulp concentrate, since I neither got strawberries nor mangoes in this season to give the authentic fruit flavour.

But all that effort in getting it right, was worth it since I did manage to create a tasty, good looking (lavender is my favourite colour)and almost restaurant like dessert :-). I was quite pleased with my creation and everyone in the house loved it !

The cake looks delicious from its photo, i would surely try this at home and thanks for the sharing this recipe.
